Betty’s Mexican-Style Black Bean Soup Recipe
In this video, Betty demonstrates how to make a hearty and healthy Mexican-Style Black Bean Soup. It is made in a slow cooker from canned goods, along with a few herbs and spices. It is super easy, and makes a large amount for your family or for college students who are looking for a great meal that is easy on the budget. Ingredients: (2) 15-oz. cans black beans, rinsed and drained 7 oz. can chopped green chiles (You may use [2] 4.5-oz. cans instead.) 14 ½ -oz. can Mexican-style stewed tomatoes, chopped, but undrained 14 ½-oz. can stewed tomatoes, chopped, but undrained 11-oz. can sweet whole kernel corn with green and red peppers, drained. (You may use regular whole kernel corn.) 4 green onions, sliced 2 to 3 tablespoons chili powder (Start with 2 tablespoons, and increase as desired.) 1 teaspoon ground cumin ½ teaspoon garlic powder Combine all ingredients in a slow cooker. Cover and cook on HIGH for 5 to 6 hours. Taste for flavorings during the last hour of cooking, and adjust to your taste, if desired. You may serve this with tortilla chips, crackers, or cornbread. I served mine with Onion-Cheddar Cheese Cornbread Sticks—delicious!!! I think you will really like this warming soup during the cold days of winter! Enjoy!!! –Betty ?

I always put brown sugar in my chili–mainly because it helps the flavor. You can put some sugar in this black bean soup, if you like!

Your recipe sounds wonderful! I usually make chili beans in the crockpot but the black beans with the corn, etc. sounds so good. Can’t wait to make it!
Looks real health and good. Isn’t that really a chili though? It’s almost how I make my chilli. Either way I will have to try it this way.

It is healthy and good. I don’t think of it as chili–for that I like some beans like pinto beans, also some garlic and onions. However, this soup does have some of the same elements as chili! I hope you enjoy it! Thanks for commenting!

I made a soup like this the other day,the lazy way.
A can of bean soup,add chicken broth for the water.A can of lentil soup by Progresso,just dump it in with the bean soup&broth.I also sauteed some garlic,onion and carrots and add this to the two soups and heat.If I have any canned tomatoes,I add that.I like the ones with spices in them.I also add some hot sauce to the soups and add a dollup of low fat sour cream on top when ready to eat.
My mouth is watering. If it weren’t 11 p.m. I would make a bee line for the grocery store and have this in a bowl as soon as possible. 5 stars.

@FirdaousEjannah78 Hi! Thanks for your lovely comment! Yes, you may use fresh vegetables in place of any of the canned or frozen vegetables. I only use the canned and frozen vegetables for convenience, because most people are more will to use those than fix the fresh ones. But, the fresh vegetables definitely will work and will taste much better!
