A Weight Watchers Friendly Recipe! Chicken and Veggies
Here are the ingredients for my famous Chicken and Veggie Dish! Enjoy! 2 Boneless skinless chicken breasts, cut into strips 1 small vidalia onion, 1 red peppers cut into strips 1 yellow peppers cut into strips 1 orange peppers cut into strips 1/2 cup portabello mushrooms 2 tbsp balsmic vinegar 2tbsp lemon juice 4 tbsp of your favorite wine ( i did it with moscato) 4tbsp flour 1 cup chicken broth 2 tbsp olive oil Instructions In a skillet add olive oil and pam spray, then toss in chicken breast, cooking until browned. Add in all of the vegetables, and cook on medium high heat, tossing frequently. In a bowl on the side, mix together balsamic vinegar, lemon juice, white wine, flour and broth. Pour mixture over chicken and veggies and reduce heat. Let stand for about 5 minutes and then serve over 1/2 cup of brown rice (or no rice if you prefer.) Serves 1-4 depending on the portions you want. REALLY REALLY GOOD!! Makes 5 servings @ 4 points per serving
