Ingredients: ~32 ounces of fat free chicken broth ~3 lbs. potatoes, diced ~1/2 onion, diced ~4 slices bacon (crisply cooked–we use turkey bacon) ~8 ounces reduced fat Velveeta ~1/4 cup fat free sour cream [We have never used the following ingredients] ~2 tablespoons flour ~3 TBSP water Instructions: 1. Combine broth and potatoes. Cover and cook 20 minutes, until potatoes are cooked through. 2. As potatoes are cooking, saute onions, then add to cooking potatoes. 3. Add cooked bacon to cooking potatoes. 4. When potatoes are soft, stir in cheese and sour cream, and simmer until cheese is melted. 5. Thicken with the flour and water mix. [we've never done this] 6. Weight Watchers Corn Dog Casserole [For Chic Chat blog] This is an easy, quick, kid-friendly recipe which packs a huge flavor punch. Enjoy! RECIPE: Corn Dog Casserole Servings: 6 [8] Points: 7 [5] Ingredients: ~1 cup finely minced celery ~1/4 c. diced sweet onion ~14 oz. Oscar Mayer turkey dogs ~1 8.5 oz. Jiffy corn muffin mix ~1 egg white ~1/2 c. skim milk ~1/4 c. water ~1/4 tsp. black pepper ~4 oz. shredded reduced fat cheddar cheese Instructions: Spray skillet with butter flavor cooking spray. Saute celery and onion for 5 minutes. Slice hot dogs into thin discs and add to skillet. Cook over med-high heat for 5 to 7 minutes. Add turkey chili and heat through. Spray 11×7 pan with cooking spray. Pour skillet contents into pan. Top with cheese. Combine muffin mix, egg white, milk, water, and pepper; pour over hot dog mixture.
