Finally made GOAL! Current weight- 124.0. Last week I was really sick, so i didn’t go to my usual Friday weigh-in (or make a video on time)…instead, I went on Sunday (where i knew zero people… except for my mom who came for encouragement because she’s awesome!)
So I tried to keep my goal achievement on the down low, haha! Can’t wait to go to my usual weigh in this Friday and celebrate with my regulars!!

In this video, Betty demonstrates how to make a hearty and healthy Mexican-Style Black Bean Soup. It is made in a slow cooker from canned goods, along with a few herbs and spices. It is super easy, and makes a large amount for your family or for college students who are looking for a great meal that is easy on the budget. Ingredients: (2) 15-oz. cans black beans, rinsed and drained 7 oz. can chopped green chiles (You may use [2] 4.5-oz. cans instead.) 14 ½ -oz. can Mexican-style stewed tomatoes, chopped, but undrained 14 ½-oz. can stewed tomatoes, chopped, but undrained 11-oz. can sweet whole kernel corn with green and red peppers, drained. (You may use regular whole kernel corn.) 4 green onions, sliced 2 to 3 tablespoons chili powder (Start with 2 tablespoons, and increase as desired.) 1 teaspoon ground cumin ½ teaspoon garlic powder Combine all ingredients in a slow cooker. Cover and cook on HIGH for 5 to 6 hours. Taste for flavorings during the last hour of cooking, and adjust to your taste, if desired. You may serve this with tortilla chips, crackers, or cornbread. I served mine with Onion-Cheddar Cheese Cornbread Sticks—delicious!!! I think you will really like this warming soup during the cold days of winter! Enjoy!!! –Betty ?
So I have decided not to do weight watchers anymore. I did lose weight while doing it but I didn’t feel good. I also didn’t feel like I was losing weight. My stomach felt bloated and my pants felt tight. After talking to my husband about what I should do he said “There is only one way I have ever seen you lose weight and be successful at doing it! The South Beach Diet!” I was like “You are sooo right!” Things I forgot to mention in the video… I went from 225.4lbs to 220.8lbs while on ww June 17th – June 29th The night of the 29th I decided It wasn’t the right plan for me so I was like “Oh! Diet starts TOMORROW!” I had a Mtn Dew and some smores that’s why I gained and went up to 222.2lbs the next day. I think everyone does that….”Diet starts Monday!” haha! Alright so I will be seeing you guys everyday for the next 5 days! I am also going to my last 2 weight watchers meetings. I paid .95 for a monthly pass and I might as well go if I’m paying for it!
